All the rice used for the ingredients is from contracted farmer Tazhane Farm. It is brewed at Morioka Handmade Village with local fresh water. The brewing process does not use the usual methods of pasteurization or fire-roasting, but instead preserves the yeast and lactic acid bacteria, resulting in a healthy, clean taste. The soft and fluffy texture on the tongue is proof of the living yeast.
