This bouillon jus.
It's a slightly rearranged dressing made from Pyonpyonsha's signature cold noodle soup, hardened with gelatin.
It is a luxurious, flavorful and concentrated julep.
The jellies slowly dissolve and fuse with the tomatoes.
This menu is actually very deep.
The shiso leaves along the top also accentuate the taste, and you can eat a bowl of salad all by yourself (lol).
